Smothered Potatoes and Sausage

Ingredients:
7-8 russet potatoes
1lb sausage (smoked is preferred)
Vegetable oil
Salt and pepper

Directions:
Peel the potatoes and cut into bite size pieces, some small and some a bit larger.
Let the potatoes soak in a large bowl of water covering them.
Put a little bit of cooking oil in the bottom of a heavy pot (cast iron preferred) just enough to coat the bottom.
Cut your sausage up into bite size pieces and cook them down in the pot till done
Remove the sausage and set aside.
I use the grease from the sausage for flavor or you can drain and add some more vegetable oil (add enough to cover the entire bottom of the pot)
Heat the oil on med-high heat
Drain the potatoes and add them to the pot and cook stirring often.
Cook for 5-10 min.
Add enough water to the pot to fill halfway up the potatoes and bring to a boil still stirring often.
Add salt, I use about 2-3 teaspoons, and stir.
Let boil till potatoes start to get soft, just enough to stick a fork in.
Lower heat to a simmer.
Let potatoes cook for about 15 minutes stirring often.
Season to taste
As you are stirring the smaller potatoes should be breaking up and making like a dense potato soup with large chunks (the reason for large and small pieces)
Add a little bit of water at a time if it gets really thick while stirring.
Add the sausage back in to the pot and stir.
Serve over rice or just as is
